Spiralized Sweet Potato Taco Dinner

 1 medium sweet potato, made into noodles
 2 tbsp coconut oil
 ½ yellow onion, chopped
 2 garlic cloves, minced
 1 red pepper, chopped
 1 jalapeno pepper, seeds removed and chopped
 1 cup baby bella mushrooms, chopped
 1 lb ground turkey
 1 tbsp chili powder
 1 tsp paprika
 1 tsp cumin
 ½ tsp salt
 ½ tsp smoked cayenne pepper

Place a large cast iron skillet on the stove over medium high heat and add the coconut oil. When the pan is hot add the onion and garlic and let cook until onions become translucent stirring occasionally.

Add the red pepper, jalapeno pepper and mushrooms and let cook 3-5 minutes stirring occasionally. Add the sweet potato and mix well. Let cook for 2-3 minutes.

Add the ground turkey and spices and mix well. Cook until the turkey is browned.
